All the juicy, cheesy magic of a cheeseburger folded into a crispy quesadilla, served with a tangy copycat special sauce. Weeknight dinner meets game-day snack.
Make the special sauce: stir together the mayonnaise, ketchup, mustard, diced pickles, and pickle brine in a small bowl. Refrigerate while you cook.
Cook the ground beef and diced onion in a large skillet over medium-high heat, breaking the beef up with a spoon, 6 to 8 minutes until no pink remains. Stir in the garlic powder, smoked paprika, salt, and pepper. Drain off excess fat.
Lightly butter one side of each tortilla. Lay a tortilla butter-side-down and spread with 2 tablespoons of the special sauce. Layer with a quarter of the cheddar, a quarter of the beef mixture, then another sprinkle of cheddar. Fold in half.
Cook the folded quesadilla in a dry skillet over medium heat, 3 to 4 minutes per side, until golden brown and the cheese is fully melted. Repeat with the remaining tortillas.
Rest 2 minutes, slice into wedges, and top with shredded lettuce, extra pickles, and a drizzle of special sauce. Serve the remaining sauce on the side.
