Everything you love about breakfast — crispy tortilla chips, spicy chorizo, melty queso, and runny-yolked fried eggs — piled onto one sheet pan and finished with jalapeños, tomatoes, and a drizzle of crema. Built for slow weekend mornings and feeds the whole crew straight from the pan.
Heat the oven to 400°F (200°C). Line a large rimmed sheet pan with parchment for easy cleanup.
Heat the olive oil in a large skillet over medium-high heat. Crumble in the chorizo and cook, breaking it up with a spoon, until browned and cooked through, 6–8 minutes. Drain on paper towels.
Spread the tortilla chips in an even layer across the sheet pan. Sprinkle half the Monterey Jack and cheddar over the chips, then scatter the cooked chorizo evenly. Top with the remaining cheese.
Bake 8–10 minutes, until the cheese is melted and bubbling at the edges.
Meanwhile, fry the eggs sunny-side up in a nonstick skillet until the whites are just set but the yolks are still runny, about 3 minutes. Season with the kosher salt.
Slide the eggs onto the hot nachos. Drizzle with the warm queso, then top with tomatoes, jalapeño, red onion, and cilantro. Finish with a drizzle of thinned sour cream or crema and the diced avocado if using.
Serve immediately, straight from the pan, while the yolks are still runny.
