Thick brioche french toast stuffed with a sweet cream-cheese filling, topped with fresh strawberries and maple syrup — like dessert, but make it breakfast.

Ingredients

Instructions

  1. 1In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Set aside.
  2. 2Toss the sliced strawberries with the granulated sugar in a bowl and let them macerate while you work — they will release sweet syrup.
  3. 3Whisk the eggs, milk, cinnamon, and salt together in a shallow baking dish.
  4. 4Spread about 2 tablespoons of the cream cheese filling on one side of 4 slices of brioche, then top with a second slice to make 4 sandwiches.
  5. 5Melt half the butter in a large skillet or griddle over medium heat. Dip one sandwich in the egg mixture, coating both sides, and let excess drip off.
  6. 6Cook 3–4 minutes per side until deeply golden and the filling is warm, working in batches and adding more butter as needed.
  7. 7Serve warm with the macerated strawberries and their syrup spooned over the top, plus warm maple syrup.
