Chewy brown butter blondies studded with cinnamon-sugared apples and finished with a warm cinnamon glaze — all the cozy flavor of apple pie in bar form.
Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving overhang on two sides for easy lifting.
Brown the butter: melt it in a medium saucepan over medium heat, swirling occasionally. Once foamy, keep cooking until the milk solids turn amber and smell nutty, 5–7 minutes. Pour into a large mixing bowl and cool for 10 minutes.
Toss the diced apples with the granulated sugar and 1/2 teaspoon cinnamon; set aside.
Whisk the brown sugar into the warm brown butter until smooth, then whisk in the eggs and vanilla.
Fold in the flour, 1 teaspoon cinnamon, nutmeg, baking powder, and salt until just combined. Fold in the spiced apples.
Spread the batter evenly in the prepared pan. Bake 28–32 minutes, until the edges are golden and a toothpick inserted in the center comes out with moist crumbs.
Cool completely in the pan. Whisk the powdered sugar, milk, 1/2 teaspoon cinnamon, and pinch of salt into a smooth glaze; drizzle over the bars. Lift out with the parchment and cut into 16 squares.
