banana, sliced — for topping; helps the top caramelize
Instructions
Heat oven to 375°F (190°C). Grease a 9x13-inch baking dish. Brown the butter: melt it in a small saucepan over medium heat, swirling until it foams, turns amber, and smells nutty, 4–5 minutes. Pour into a large bowl to stop the cooking.
Whisk the brown sugar into the warm brown butter until dissolved. Add the mashed bananas, eggs, milk, and vanilla; whisk until smooth.
Stir in the oats, baking powder, cinnamon, and salt until evenly moistened. Fold in 1/2 cup of the walnuts.
Spread the mixture into the prepared dish. Top with sliced banana and remaining 1/4 cup walnuts. Drizzle with the maple syrup.
Bake 35–40 minutes, until the center is set, the edges are golden, and a toothpick comes out with moist crumbs.
Rest 10 minutes before serving warm with extra maple syrup. Refrigerate leftovers up to 5 days; rewarm in the microwave or oven.
